Guacamole! If you totally forgot you need to actually bring something to that New Year’s Eve gathering or just need something to eat while hiding on the couch, watching Netflix & trying to avoid any social contact at all on New Year’s Eve, guacamole is your friend!
I admit, I went decades of my life declaring my hate for guacamole. I had no idea I was living a lie & I do apologize to the wonderful avocados of the world. (I’ll get around to you later, sweet potato fries.) However, all was forever changed when a friend of a friend brought a bowl of the stuff to a 4th of July get together this summer. I was peer pressured into trying it & it was the best damn stuff I’ve ever eaten. Turns out it’s incredibly easy to make too.
- 2 ripe avocados
- 1 Serrano pepper
- Juice from 1 lime
- 1 pack of Old El Paso guacamole seasoning
Optional:
- Cilantro (I’m a fan, my friends are not. My desire for cilantro does not outweigh my desire to not hear them complain about cilantro)
- Diced tomatoes
- Diced onions
Just add any of these to the finished product if you want.
Scoop out the insides of the avocados & put them in a medium bowl (save the pits for later though). Grab a potato masher or fork & mash up the avocados to desired consistency. Remove the seeds from the Serrano pepper & dice it. Combine the lime juice, seasoning & pepper in the bowl with the avocado & mix it all up. Place the avocado pits back in the mixture to keep everything green & chill for at least 30 mins. Grab a bag of chips & hide from society. Or share it with friends. Whichever.
