Coffee pancakes. Yes, coffee pancakes.

When it’s Saturday and the day’s to-do list is way too long for a Saturday, you just go ahead and put the coffee in the pancakes. And, you know, hope you stop vibrating long enough to get some stuff done.

(This post brought to you by all the clearance espresso powder left over from Kroger’s annual Tour of Italy sale.Also known as one of my favorite times of year. I also bought coffee-crusted cheese. Not bad!)

Chocolate Chocolate Chip Espresso Pancakes

What you’ll need: (makes about 4 pancakes)

  • 1 tablespoon instant espresso powder
  • 1 tablespoon chocolate syrup
  • about 1/2 cup of your favorite pancake mix (prepared however your directions say to)
  • handful of chocolate chips
  • whipped cream for topping (optional)

What you’ll do:

So easy. After you get your pancake mix prepared, take the espresso powder, chocolate syrup and chocolate chips and throw them in there. Mix well. Pour the batter on your heated griddle and, well, cook the pancakes. (You can also use a skillet, but my kitchen griddle is only second to my coffee maker as my favorite kitchen appliance, so I suggest getting one.) Let the pancakes cool for about a minute, top with whipped cream and a sprinkle of espresso powder. Drink two huge cups of coffee while enjoying your pancakes and take flight to get that to-do list completed.
